Tips and Tricks for Your Thanksgiving Turkey – New Orleans style!

Thanksgiving is right around the corner and there is a lot of delicious cooking to be done! For many people, the turkey is the most important part of the Thanksgiving meal, and we want everyone to know that we are sharing our New Orleans tradition with everyone! Our Cajun fried turkeys are a great addition to any Thanksgiving feast!

Since our Atlanta opening, 15 years ago, we have been frying turkeys for families all over Atlanta. In the last 15 years we have sold more than 20,000 of our Cajun fried turkeys here in Atlanta.

In the spirit of the holiday, we want to give all of our readers a few tips from Copeland’s Atlanta CEO Bill Goudey for cooking these turkeys at home.

  • Thaw the bird for two day and drain it completely.
  • Inject with poultry seasonings and marinade for 24 hours, then cook in 350°F peanut oil.
  • Make sure the turkey is dry before placing it into the oil, so that the oil will keep from sparking.
  • Turn off the flame when you put the turkey in or you could get burned!
  • Watch to make sure the pot does not boil over and is protected at all times.
  • It only takes 45 minutes to cook a 12-14 pound turkey, but the instructions are the most important tool.
  • When using a recipe, study the ingredients. If you see something in the ingredients that you and your family do not like or can not use, then try to think of another ingredient.

Copeland’s of New Orleans – Atlanta: 15 Years in the Making

Copelands15YearIn 1998, Copeland’s of New Orleans – Atlanta franchise was just starting out, but now in 2013 we are excited to celebrate our 15th Anniversary with all of our guests! The celebration will be in three parts (every month from now until our true anniversary date!). For the first part of our celebration we are bringing back the National Cheesecake Day promotion that everyone loved so much! All day on Tuesday, October 15 we will be offering buy one, get one free offers on our delicious cheesecakes to celebrate the first installment of our 15th Anniversary!

If you are excited for our 15th Anniversary cheesecake day, then you are really going to be excited for what we have in store for Friday, November 15. I’ll give you a hint…its in honor of New Orleans’ most famous holiday…MARDI GRAS! We will be hosting a Mini Mardi Gras celebration for the second installment of our anniversary celebration. We’ll have food and drink features as well as a Live Jazz Band.

The third, and probably most exciting, installment of our celebration is the December celebration, which is the true 15th Anniversary. On December 2, 1998 Copeland’s Restaurant opened its Cumberland location doors for the first time! Now 15 years later we are having a party to celebrate! Jazz Roots Atlanta Returns for its 2nd Season!

Jazz Roots: A Larry Rosen Jazz Series presented by KIA returns to the Cobb Energy Centre for the 2013-2014 season. The first of the five Jazz Roots concerts will be A Tribute to Ella, Joe & Basie featuring Kevin Mahogany, Janis Siegel & the Count Basie Orchestra TODAY (Wednesday, September 25, 2013). Copeland’s is proud to support CURE Childhood Cancer!

September is National Childhood Cancer Awareness month! Join us as we hear stories through CURE of the amazing stories from the lives of children who have been impacted by this deadly disease. CURE‘s Kids Conquer Cancer One Day At a Time” has raised more than $817,000 in past years! This online event is in its 5th consecutive year and hopes to see that number grow in order to fund the life saving pediatric cancer research!


CURE believes that childhood cancer can be cured in our lifetime, which is the driving motivation behind their mission to raise funds for these children through the lives and experiences of children diagnosed with cancer as well as their families. Since its inception in 1975 by Dr. Abdel Ragab, Emory University’s first pediatric oncologist, CURE has partnered with other cancer institutions and organizations to develop new medications and therapies that each lead us one step closer to finding the CURE!

Join us as we support CURE and become inspired by the amazing courage and faith of these children and their parents! Saints Season 2013 at Copeland’s Atlanta: A Season of RedemSEAN
